Why eating healthy?

NOW, CHEW ON THIS! is written in response to the growing need for delicious food that is free from gluten, dairy, refined sugar, nuts, preservatives and additives. My aim is to bring together a collection of recipes that everyone can eat, while at the same time offer the vegetarian cook lots of freedom of choice when serving those with diverse dietary needs.

The subject of food allergies can be daunting and difficult for the uninitiated cook, and also embarrassing creating uncomfortable moments for both their guests and themselves. It took me a while to understand the difference between dairy-free and vegan diets – that eggs can be eaten as part of a dairy-free diet, but vegans consume no part of any animal. Most wrongly assume that eggs are classified as dairy, primarily because that is generally where they are found in local traditional grocery stores. Who knew?

Many people choose a gluten-free diet for reasons other than necessity; sometimes they just want to feel healthier or they want to lose weight. Others do so because they have been diagnosed as being sensitive to gluten, or worse, have an auto-immune response to gluten, commonly known as celiac disease, a condition some are born with while others acquire it. Gluten is a protein found mainly in wheat, barley, and even in rye. All our recipes are gluten-free. Going gluten-free can be your health plan to living a slim, vibrant and delicious life.

Enlightenment is a wonderful thing! More people are beginning to have a desire to learn about their relationship with food and disease. This is not a NEW concept, it is ancient wisdom, “Let your food be thy medicine and thy medicine be thy food,” Hippocrates (460-377 BC). Ironically, he is credited as being the father of modern medicine with doctors upon graduating taking the “Hippocratic Oath.” Yet so many doctors prescribe pills and synthetic concoctions. Here’s a thought for doctors…ya reading? Write a prescription for organic foods, herbs and spices and, oh yeah, the prescription is then covered by insurance. Nope, that would create a nation of clear-minded individual thinkers not being led by the Pied Piper.

Does the song “Killing Me Softly” ring a bell? Replace the word softly with slowly. Eating processed, packaged, and refined foods that contain chemicals to preserve them on the shelves for months or even years means we are consuming synthetic so called “foods” with no nutritional value, all the while blocking and depriving the living cells and brain in our bodies of oxygen, circulation and clean systems leading to disease. In addition, foods with chemicals are no longer alive. Our bodies are meant to thrive on real foods that are alive and nutrient dense. 

Weaning ourselves from emotional and habitual dependence on a diet high in refined sugar can be a long journey, but I hope it will be easier with the help of this book. My recipes use fruits and lower sugar options like honey, agave, dates, coconut sugar and seasonal fruit combinations.
